Ultimate Fluffy Pancakes

Ingredients: (Serves 4)

1 1/2 cups milk (or substitute 1 1/2 cups rice milk)
1 cup Living NOW® Gluten-Free Baking & Pancake Mix
1 egg (or substitute 1 tbsp applesauce + 1 tsp baking soda)
2 tbsp NOW Real Food® Turbinado Sugar
1 tsp melted butter (or substitute 1 tsp Ellyndale Organics™ Canola Oil)
1 tsp NOW® Organic Vanilla Extract

Directions:

  1. Place lightly oiled pan or skillet on medium heat.
  2. In large bowl, combine all ingredients until well blended.
  3. Pour 1/4 cup batter into pan and cook for 3 minutes or until golden brown.
  4. Flip the pancake and cook for an additional 2 minutes.
  5. Serve warm with NOW Real Food® Organic Maple Syrup.

Mom's Blueberry Muffins

Ingredients: (Serves 4)

1/2 cup NOW Real Food® Turbinado Sugar
1 egg (or substitute 1 tbsp applesauce + 1/2 tsp baking powder)
1 1/2 cups milk (or substitute 1 1/2 cups rice milk)
1/3 cup Ellyndale Organics™ Sunflower Oil
1 tsp NOW® Organic Vanilla Extract
1 cup Living NOW® Gluten-Free Baking & Pancake Mix
1/2 cup fresh blueberries

Directions:

  1. Preheat oven to 350°F and grease muffin tins.
  2. In a large bowl whisk together sugar with egg until frothy.
  3. Add milk, Ellyndale Organics™ Sunflower Oil, and vanilla until fully incorporated.
  4. Whisk in Gluten-Free Baking & Pancake Mix until smooth.
  5. Lightly fold in blueberries.
  6. Pour batter into muffin tins until 2/3 full.
  7. Bake for 20 to 25 minutes.
  8. Allow muffins to cool for 10 minutes then serve.
